The majority of the fillets are exported to the United States and processed into fixed weight portions, but a significant percentage is processed in Chile using a MARELEC portioning cutter.

The dual lane cutter portioning machine has two cutting lanes, a faster cutting speed, portioning to fixed weight, length, or a combination of the two and a swivel arm touch-screen for intuitive programming. When the product enters the infeed lane, one top camera scans the product for maximum accuracy, and a visualisation of the cutting pattern appears on the touch screen. The product is set to a fixed weight in this case 8 ounces, and is then immediately cut and released through the outfeed, where it will be sorted and weighed by the workers. Cooke aquaculture has been able to optimize yield while maintaining qualitative and fresh products ready for delivery as a result of these advancements.
